Research suggests that when people stick to a lower-sodium diet for a period of time, they actually develop a preference for less salty foods. Meanwhile, reports from the Iowa Women’s Health Study, which has been ongoing since the mid-1980s, showed that women who made the transition to a plant-based, lower-fat diet actually acquired, over a span of months, aversions to many of the processed and fast foods they liked at the start of the study.
